- 12 eggs, Large
- 6 tbsp mayonnaise
- 1.5 tsp Dijon mustard
- 1.5 tsp curry powder
- .75 tsp cayenne pepper, adjust to taste
- 1.5 tsp sea salt
- 2 tsp lemon juice
- 3 tsp chopped cilantro, for garnish
- 1.5 tsp paprika, for garnish
- 12 small lemon wedges, for garnish
Instructions
Step 1: Boil the Eggs
- Place eggs in a saucepan and cover with cold water.
- Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 10 minutes.
- Transfer eggs to an ice bath and let cool for 5 minutes.
Step 2: Prepare the Filling
- Peel the eggs and slice them in half lengthwise. Remove the yolks and place the yolks in a bowl.
- Mash the yolks with a fork and mix in mayonnaise, Dijon mustard, curry powder, cayenne pepper, salt, and lemon juice. Stir until smooth and creamy.
