6 tbsp mayonnaise
1.5 tsp Dijon mustard
1.5 tsp curry powder
.75 tsp cayenne pepper adjust to taste
1.5 tsp sea salt
2 tsp lemon juice
3 tsp chopped cilantro for garnish
1.5 tsp paprika for garnish
12 small lemon wedges for garnish

Instructions

Step 1: Boil the Eggs

Place eggs in a saucepan and cover with cold water.
Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 10 minutes.
Transfer eggs to an ice bath and let cool for 5 minutes.

Step 2: Prepare the Filling

Peel the eggs and slice them in half lengthwise. Remove the yolks and place the yolks in a bowl.
Mash the yolks with a fork and mix in mayonnaise, Dijon mustard, curry powder, cayenne pepper, salt, and lemon juice. Stir until smooth and creamy.

Step 3: Fill and Garnish

Spoon or pipe the filling back into the egg whites.
Sprinkle them with paprika and garnish with chopped cilantro.

Step 4: Serve

Serve immediately or refrigerate for up to 2 days before serving.

Notes

For a smoother filling, blend the yolk mixture using a food processor.
Adjust the spice level by increasing or decreasing the cayenne pepper.
