These are as easy as 1-2-3! Or 1-1-1! This could quite possibly be the easiest cookie recipe ever! I bet you have all three, yes THREE ingredients in your kitchen right now! I know these aren’t necessarily “Christmas” cookies but when I make my Christmas cookies in our house, I make the cookies my family loves and these happen to be one of them!
Ingredients Needed:
- 1 cup sugar
- 1 cup peanut butter
- 1 large egg
Mix all three ingredients in medium bowl. Refrigerate dough for at least 30 minutes (this makes “balling” the dough SO. MUCH. EASIER.) Using cookie scoop, drop cookies on parchment paper lined cookie sheet.
Using a fork make hash marks, turn cookie 90 degrees and mark again.
Bake at 375 for 10 minutes*.
*Note about baking time: These cookies go from good to burnt FAST. In my oven, which is on the hot side, 9 minutes is the key baking time. Be sure to watch them towards the end. When I lived in MN, it took 11 minutes. So just be patient and attentive on your first batch until you figure out your perfect baking time!
