I got this fabulous idea from Dine and Dish for Watermelon Rice Krispie Treats. Thanks for sharing Kristen!

I had to make a minor alteration because I couldn’t find any watermelon flavored Kool-Aid that wasn’t CLEAR! The time you want a “bright red, sure to stain your clothes drink mix”, you can’t find one! So I used strawberry instead. since she calls for strawberry marshmallows. I used a 9″ circle spring form cake pan which made it super easy to slice and store.
I followed her directions and Wah-Lah! I used mini-chocolate chips and they were PERFECT watermelon seeds! I cut a slice and stuck it on a popsicle stick and as you can see it was a sure hit!
We did live in Minnesota for 3.5 years…so put it on a stick and it’s So. Much. Better. ;-)
Ingredients Needed:
- 8 cups of rice krispie cereal
- 2 bags of large marshmallows
- 1 packet of lime kool-aid drink mix
- 1 packet of strawberry kool-aid drink mix
- 1/2 cup of butter, plus extra for greasing
- 9 inch spring form pan
- mini chocolate chips (1/8 cup roughly)
- popsicle sticks
Instructions
- Start out with two large to medium pots. In each, melt 1/4 cup butter and bag of marshmallows over medium to high heat stirring constantly. {Don't let this burn!}
- Once the marshmallows are melted and smooth, add 1 packet of kool-aid drink mix to each of the pots. One for lime and one for strawberry.
- Turn off heat once drink mix is fully incorporated.
- Add 4 cups of Krispie cereal into each pot and stir until fully coated.
- Grease spring form pan well with butter.
- Pack in the green mixture around the edges of the pan forming the "rind" of the watermelon
- Fill the center with the red cereal mixture and press flat.
- Let cool.
- Add mini chocolate chips to the top as "seeds"
- Cut into wedges and insert a popsicle stick!
- Enjoy!
