Apple Autumn Cake

I am so excited to share this fabulous recipe for Autumn Apple Cake.  I am not sure how I even acquired this recipe but I {heart} it and I am sure you will also.  Every time I make it, the cake is a huge hit!  The pops of apple and raisins keep it fresh and the chopped walnuts add the perfect bit of nutty flavor for the fall!

Apple Autumn Cake

 

Ingredients Needed:

  • Cooking Spray
  • 1 1/2 cups of all purpose flower + 1 tablespoon
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 3/4 cup granulated sugar
  • 5 tbsp. butter
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1/2 cup milk
  • 1 cup finely chopped sweet apple (Honey Crisp, Pink Lady, Gala & Braeburn apples work great)
  • 1/2 cup raisins (regular or golden)
  • 1/4 cup finely chopped walnuts
  • powdered sugar (optional)

Apple Autumn Cake

 

1.  Preheat oven to 350 degrees F

2.  Coat 9 inch round cake pan with cooking spray and then dust with flour.  This step is important, don’t skip.  I also found using a spring form pan works best if you have one.

3.  Spoon flour into measuring cups and level with knife.  Combine flour, baking powder, salt and cinnamon in small bowl.  Wisk or sift to get rid of all the hard lumps.  Set aside.

4.  Cream granulated sugar and butter with a mixer until smooth.  Beat in egg and vanilla.

5.  Alternate adding in flour mixture and milk.  Start and end with flour.

6.  Fold in apples, raisins and walnuts.

7.  Pour batter into pan and bake for 50 minutes or until center comes out clean with a toothpick.

8.  Cool for 10 minutes in pan and then remove from pan and continue to cool.

You can dust with powdered sugar if you want, but I really feel that it is perfect without it.  I also like to serve this cake slightly warm.  It is great by itself but served al a mode is great also!
