Use a small cookie scoop or a spoon to drop 1 ½ tablespoon sized balls onto the lined baking sheets. Leave some space between as the cookies will slightly spread.
Bake at 350℉ for 10-12 minutes, until the tops are set and it reaches desired doneness. Don't overcook. You don't want the tops to be brown.
Remove the cookies from the oven. They will be slightly risen, use the flat bottom of a drinking glass to flatten the cookies. A light press is all that is needed.
Allow the cookies to cool on the pan a few minutes before transferring the cookies to a cooling rack.
If using candy or baking hearts, press one of those into the cookies now. If piping on icing wait until the cookies are fully cooled before doing so.

For Reference: Some cookie scoops are sized in ounces vs. tablespoons. 2 tablespoons is equal to 1 ounce. You can use different sizes, it will just alter the servings yielded. If piping the hearts, pipe a small v and then trace around the v for a simple, fool-proof heart shape. Be sure the cookies are cool before piping on the icing so that it does not melt.
