I got this fabulous idea from Dine and Dish for Watermelon Rice Krispie Treats. Thanks for sharing Kristen! How fun would these be at your next picnic? These are fruity and fun and just perfect for summer! I wasn’t sure anything could make a Rice Krispie Treat better and then this happened and proved me wrong! Pop a slice on a stick and you will be a hit with everyone around!
I had to make a minor alteration because I couldn’t find any watermelon flavored Kool-Aid that wasn’t CLEAR! The time you want a “bright red, sure to stain your clothes drink mix”, you can’t find one! So I used strawberry instead. since she calls for strawberry marshmallows. I also used a 9″ circle spring form cake pan which made it super easy to slice and store.
I followed her directions and Wah-Lah! I switched it up and used mini-chocolate chips and they were PERFECT watermelon seeds! I cut a slice and stuck it on a popsicle stick and as you can see it was a sure hit! I mean everything is better on a stick right?
We did live in Minnesota for 3.5 years…so put it on a stick and it’s So. Much. Better. ;-)
As you can see someone was a pretty big fan of them! Oh those chubby little cheeks are just so adorable!
How to Make Watermelon Rice Krispie Treats:
Watermelon Rice Krispie Treats
Ingredients
- 8 cups Rice Krispie Cereal
- 2 bags Marshmallows
- 1 packet Lime Kool-Aid Drink Mix
- 1 packet Strawberry Kool-Aid Drink Mix
- 1/2 cup butter, plus extra for greasing
- 1/8 cup Mini Chocolate Chips
Instructions
- Start out with two large to medium pots. In each, melt 1/4 cup butter and bag of marshmallows over medium to high heat stirring constantly. {Don’t let this burn!}1/2 cup butter, 2 bags Marshmallows
- Once the marshmallows are melted and smooth, add 1 packet of kool-aid drink mix to each of the pots. One for lime and one for strawberry.1 packet Lime Kool-Aid Drink Mix, 1 packet Strawberry Kool-Aid Drink Mix
- Turn off heat once drink mix is fully incorporated.
- Add 4 cups of Krispie cereal into each pot and stir until fully coated.8 cups Rice Krispie Cereal
- Grease spring form pan well with butter.1/2 cup butter
- Pack in the green mixture around the edges of the pan forming the “rind” of the watermelon
- Fill the center with the red cereal mixture and press flat.
- Let cool.
- Add mini chocolate chips to the top as “seeds”1/8 cup Mini Chocolate Chips
- Cut into wedges and insert a popsicle stick!
- Enjoy!
